This Junmai was brewed using a Yamahai shubo, an older and more demanding method of yeast starter, which adds more complex flavours and depth to the Sake. The soft, pure local water provides a clean, clear expanse for bold acidity and umami along with a pleasing, balanced aroma. It is Nama chozo which means it has been pasteurized only once just before bottling. This helps to retain typical Nama (un-pasteurized) freshness. Enjoy this Sake slightlychilled. It is very versatile and a great accompaniment to a broad range of cuisines; pairing well with Japanese, Asian fusion, and western dishes to name a few.
